Well you just missed her! Eva just left after dropping off the YUMMIEST looking produce! If we don't eat it all, here is what may be left: 6 varieties of perfect tomatoes, mixed cheery tomato baskets, many pounds of divine peppers, including perfect jalapeño, eggplant (we will need more, this is great stuff!) English cucumbers and garden cucumbers, kale, 3 varieties of perfect squash (Mike and Michelle had family over for dinner and they did the ol' lightly roast the squash on the grill with seasonings.....YUMMY! it was just barely soft and PERFECT!) and along with the other fantastic produce we have - both local and from the south, it makes me wonder one thing..............
WHY ARE YOU SITTING AT THE COMPUTER! Come on down and grab some while it's hot! (it is! Still hot from the sun and just out of the garden!!!)

Soup to go! We created a seven beans and barley vegetable soup ready to take home! Just add to 5 cups of water, and simmer for a couple hours to have a NUTRITIONAL great tasting soup! Personally, I add a lot of toppings when I can to my already cooked soups such as: Avocado, fresh tomatoes, fresh green onions, Fresh Zucchini and every great while a little raw cheddar cheese! Heck, this sounds so good I will make some soup for Dinner! Come join me!
Gardens Galore! Yes, every garden is abundant with sun packed nutrients, and now you need to figure what to do with all of those vegetables! Visit our recipe pages on our literature page for some YUMMY zucchini dishes, and here are a few things we do that just take minutes!
Vegetable roll ups:
Sauté lightly any vegetable you have
Roll in a sprouted wrap, and add raw cheese if desired.
Lightly sauté entire roll in olive oil only a few minutes and ENJOY!!!!
Veggie Sandwich:
Enjoy fresh veggies instead of meat and cheese on your bread or wraps! GREAT with a avocado spread. Make an easy avocado spread by mashing an avocado, and adding herbs of choice or an all purpose organic seasoning, and if desired, a pinch of veganaise or almondaise! YUM!
Sautéed Veggies over quinoa or rice:
Gently sauté veggies a few minutes (never over cook as you kill many nutrients) and serve over rice or quinoa! Heck, last night I was hungry and quickly sautéed a ton of veggies and ate them as is! I LOVE garlic so load up on the garlic when sautéing, and it's GREAT for your immune system!
Cold Quinoa Salad:
One of my favorite lunches is soooooo easy. I take a cup or so of quinoa, and top it with a ton of fresh vegetables! Avocados, tomatoes, zucchini, green onions, garlic, chives, fresh herbs, sea salt and raw olive oil! (you could warm the quinoa or rice and use organic butter if you want!)
No Lettuce Salad:
Chop all your vegetables and enjoy as a salad! Add nuts and seeds too!
