What is Chai?
Masala Chai, an aromatic spiced tea, has been the Indian drink of choice for hundreds of years. RECIPES using Bok Choy:

Marinated Bok Choy Salad~
A quick, easy and super yummy asian salad! Compliments of goneraw.com

2-3 Bok Choy
1/4 c sesame oil
1 tbsp nama shoyu or wheat free tamari
1 tbsp apple cider vinegar
1-2 tbsp fresh squeezed orange juice
1-2 tsp lime juice
1/2 tsp fresh ginger, minced
optional:
1 garlic clove, minced
shredded carrots, cherry tomatoes or other vegetable
1 tsp toasted sesame oil (not raw)

Preparation: Using bok choy, cut the stems to about 1 inch, keeping the leaves whole add all to a bowl. Combine marinade ingredients in a jar and shake well.
Pour dressing over bok choy and serve immediately or marinate for 1-2 hours to let the bok choy soften. Keeps in refrigerator for up to two days.


Bok Choy Corn Cilantro Salad
2-4 heads bok choy
1 bunch cilantro
4 cobs fresh corn
1 tbs. flax seed oil
1 tbs. cumin
1 tbs. oregano
1 tsp. garlic powder
1 tsp. sea salt w/sea vegetables mixture
Juice of 1 lime
PREPARATION:
1) Chop bok choy and cilantro in food processor with chopper blade,
then transfer to large salad bowl.
2) Cut corn off of cobs and add to salad
3) Add remaining ingredients to salad and toss together thoroughly...
4) Enjoy!

It's time to beat the heat with some REFRESHING RECIPES!

SUMMER CHILLER:
Fill a large pitcher with pure water and add:
- about 15 peppermint leaves
- 1 chopped lemon
- 1/3 chopped cucumber
- optional honey or stevia to sweeten
Leave the pitcher in the fridge overnight to steep!
So REFRESHING :) 


ZUCCHINI NOODLES with Chunky Sundried TOMATO SAUCE
1/2 cup packed sun dried tomatoes, soaked 3-6 hours
1 cup diced fresh tomato
1/2 cup diced red bell pepper
6 kalamata olives, pitted
1 small clove garlic
2 tablespoons chopped green onion
2 tablespoons packed fresh basil
1 teaspoon dried oregano
Squirt of lemon juice
1 tablespoon olive oil
Sea salt, to taste
Large handful chopped parsley

Process all ingredients except the parsley and salt, in a food processor until still a little chunky but mostly broken down.  Stir in the fresh parsley. Season with sea salt, to taste.  Toss with spiralized zucchini noodles.


STRAWBERRY LEMONADE (blender style)
1 cup strawberries
Juice from 2 lemons
32 ounces pure water
1 vanilla bean
Raw Honey or stevia to taste

Put strawberries & lemons in blender to mix. Strain through a strainer or
sprout bag and mix with 32 ounces of water, stevia, and a whole vanilla bean into a pitcher. Enjoy as a refreshing summer drink!!


MARINATED ASIAN KALE SALAD
1 large bunch kale thinly sliced (or another type of kale, collards, or Swiss chard)
Juice from 1 lime (about 6 tablespoons)
1 tablespoon Vegan DHA Flax Oil or raw sesame seed oil
1 tablespoon cold pressed olive oil or tea seed oil
2 tablespoons chickpea miso
1 tablespoon fresh grated ginger
2 tablespoons finely chopped green onion( about 2 green onions green part only)
1 cup finely chopped bell pepper (about 1/2 large bell pepper)
handful of your favorite seaweed (torn dulse, silky sea palm, kombu, wakame)
1 tablespoon black or white sesame seeds (optional)

Make sure the greens are thinly sliced, you can even shred the kale
with your food processor with the slicing disk on. Put the shredded
kale in a large bowl and mash in with a fork the oil, chickpea miso,
shredded ginger, and lime juice. Make sure the miso and oil is well blended.
You can even massage the kale with your hands to make sure the kale is well coated.  Serve now or let the kale marinate in the refrigerator for at least 1 hr., it can even sit overnight. The longer it marinates the more tender the kale will be. When you are ready to serve add in the bell peppers, seaweed, cucumber, green onion, and sesame seeds. Enjoy!

SHOW & TELL HERBS at the store all week!...compliments of Jen

I've been inspired by a customer that came in yesterday with a "weed" and wondering if it was a medicinal herb called Yarrow.  It was not yarrow, it was the noxious poison imposter of Queen
Anne's Lace, which is Hemlock! So, today I'm bringing in QUEEN ANNE'S LACE and YARROW. Most of us think that our yards & side roads are full of "WEEDS", but the fact is that a majority are medicinal herbs or wild foods.

Find out what "weeds" are edible or not this week at the store!! Examples of herbs & wild foods will be showcased each day with information.

QUEEN ANNE'S LACE, also called "Wild Carrot," is a common plant in dry fields, ditches, and open areas. It was introduced from Europe, and the carrots that we eat today were once cultivated
from this plant.

Queen Anne's Lace grows up to four feet tall. Its leaves are two to eight inches long and fern-like. This plant is best known for its flowers, which are tiny and white, blooming in lacy, flat-topped clusters. Each little flower has a dark, purplish center.

The fruits of Queen Anne's Lace are spiky, and they curl inward to build a "birds' nest" shape.
This plant blooms from May to October. It is a biennial plant, which means it lives for two years. It will spend the first year growing bigger, and then bloom the second year.


YARROW~Achillea millefolium
Other Names: Milfoil, Old Man's Pepper, Soldier's Woundwort, Knight's Milfoil, Thousand Weed, Nose Bleed, Carpenter's Weed, Bloodwort, Staunchweed.

Habitat:
Yarrow is a perennial herb, native to Europe and Asia and naturalized in North America and most other countries throughout the world. Yarrow is very common along roadsides and in old
fields, pastures, and meadows in the eastern and central United States and Canada.

Cultivation:
Yarrow is easily cultivated, will survive in poor soil. Prefers a well-drained soil in a sunny position. A very good companion plant, it improves the health of plants growing nearby and enhances their essential oil content thus making them more resistant to insect predations also improves the soil fertility.

Description:
Yarrow grows from 10 to 20 inches high, a single stem, fibrous and rough, the leaves alternate, 3 to 4 inches long and 1 inch broad, larger and rosette at the base, clasping the stem, bipinnatifid, the segments very finely cut, fern-like, dark-green, giving the leaves a feathery appearance. The flowers
are several bunches of flat-topped panicles consisting of numerous small, white flower heads. Each tiny flower resembling a daisy. The whole plant is more or less hairy, with white, silky appressed hairs. Flowers bloom from May to August. Gather stem, leaves and flower heads in bloom, dry for later herb use. Dry herb edible as a spice or flavoring, strong sage flavor.

Properties:
Yarrow is a very valuable medicinal herb, with much scientific evidence of use in alternative medicine as an antiseptic, antispasmodic, astringent, carminative, diaphoretic, digestive, emmenagogue, stimulant, and tonics, vasodilator and vulnerary. Yarrow is used against colds, cramps, fevers, kidney disorders, toothaches, skin irritations, and hemorrhages, and to regulate
menses, stimulate the flow of bile, and purify the blood. Medicinal tea is a good remedy for severe colds and flu, for stomach ulcers, amenorrhea, abdominal cramps, abscesses, trauma and bleeding, and to reduce inflammation. The main constituents are volatile oils including linalool, camphor, sabinene, and chamazulene, sesquiterpene lctones, flavanoids, alkaloids including achilleine, polyacetylenes, triterpenes, salicylic acid, coumarins, and tannins which prove these uses in
alternative medicine to be effective.

Recipes: Nature's Garden has TEA & LIQUID EXTRACT available
Yarrow tea: To 1 tsp. dried herb add 1 cup boiling water, steep
for 10 min. sweeten to taste.

Yarrow Omelette Recipe
6 eggs
¼ cup finely chopped yarrow
1 small onion finely chopped
Salt and pepper to taste
In a mixing bowl beat eggs. Add in finely chopped yarrow and onion and blend well.
Cook the omelette your favourite way then enjoy!

Spice up your Life!~Healing Kitchen

"Spice up your Life!" RECIPES
How to turn your kitchen into a "Healing Kitchen" by using herbs and spices!!

Most of us use spices to help improve the flavor of our meals.  What many may not realize is how much common kitchen herbs and spices can also help improve our health. Here are some examples and a few RECIPES:

ALLSPICE: Allspice is a spice that is commonly used in Carribean recipes, and is an anti-inflammatory, and anti-gas. It helps conditions such as rheumatism, fatigue, arthritis, and stiffness with it’s analgesic and muscle relaxant properties. Allspice can also be used in cereals such as oatmeal as well as a variety of other Jamaican and other Carribean meals.

BASIL: Basil is an herbal carminative which can relieve gas and soothe stomach upsets. Basil is a great herb to combat stress and mild depressed moods.  Easily added to vegetables, soups, and pasta preparations, basil helps increase epinephrine and norepinephrine and decreases seratonin.
This also makes it good for headaches (particularly of the migraine variety).  Basil lives in the mint family and can also be drank as tea. Basil leaves contains many health benefiting essential oils such as eugenol, citronellol, linalool, citral, limonene and terpineol. These compounds are known to have
anti-inflammatory and anti-bacterial properties.

BLACK PEPPER: Black pepper is one of the oldest and most commonly used spices. It has a stimulating effect on the digestive organs and produces an increased flow of saliva and digestive juices. Black pepper can help relieve indigestion as well as flatulence. It also helps improve absorption and utilization of curcumin, which the body normally does not absorb very well.

CARAWAY SEEDS: are a digestive aid, spicy and warm. Caraway seeds ease colic, painful digestion, bloating, flatulence, and diarrhea. Caraway tea is safe for children and adults. Drink tea 1 cup 2-3 times a day.

CARDAMOM: Anti-inflammatory, anti-spasmodic, essential oil, mucilage, improving circulation
Drink Recipe: water
2 tablespoons orange peel
1 tablespoon cinnamon
1 tablespoon coriander
1 tablespoon cardamom
1 tablespoons fennel
1 teaspoon clove
1 teaspoon black pepper
Put water and herbs into a large pot. Turn on the lowest heat setting on the stove with the lid on. Simmer for fifteen minutes, turn off the heat and let everything cool down for one half hour.
Strain out the herbs and add any nut milk (almond, coconut...) and honey to taste. Drink cool or re-heat. Serve as a triple batch recipe for parties!

CAYENNE: Cayenne pepper has wonderful cardiovascular benefits, including lowering blood pressure. Master herbalist Doctor, JohnR. Christopher noted that a couple of teaspoons of cayenne pepper never failed to stop a heart attack in only minutes. When added to food, cayenne increases appetite, improves digestion and relieves gas, nausea and indigestion. It also thins phlegm and eases its passage from the lungs.

CINNAMON: Cinnamon contains a compound that kills a variety of illness causing bacteria, including the E.coli, Salmonella, and Staphylococcus aureus. Cinnamon has multiple medicinal properties including  anti-inflammatory, anti-microbial, anti-parasitic, digestive and muscle relaxing.
However, cinnamon is most notable for it’s studies in type 2 diabetes where it has been shown to lower blood sugar in some European studies.  It was also shown in one German study to also lower cholesterol and triglycerides. Cinnamon goes great in oatmeal or amaranth, and can spice up a smoothie too.  If you suffer from allergies, indigestion, or arthritis, you might add cinnamon to your regular eating regimen too. In addition, cinnamon has a tranquilizing effect that helps reduce anxiety and stress.

CLOVE: Oil of clove is 60 to 90 percent eugenol, which is a potent pain deadening anti-microbial. Clove has earned the official endorsement of the FDA as an effective stopgap measure for tooth pain. Clove also helps lower blood sugar by helping the body use insulin more effectively.

DILL: is spicy and warming and helps digestion. Dill is a carminative and good to relieve gas. Take the seeds of dill as a tea. Lightly simmer 2 tsp of seed in 1 cup of water for 15 minutes.

FENUGREEK: Fenugreek seeds help with diabetes, lower blood sugar and lower bad cholesterol. Fenugreek also helps maintain good metabolism, prevents constipation, purifies the blood and helps flush out harmful toxins. Fenugreek seeds and leaves are good for increasing breast milk in lactating women.

GARLIC: Garlic is a natural antiseptic and powerful cancer fighter with numerous other health benefits. It helps lower cholesterol, reduces plaque, lowers blood pressure, and lowers the risk of atherosclerosis (hardening of the arteries). Garlic is also effective against digestive ailments and diarrhea.

GINGER: Ginger is a wonderful digestive aid which stimulates saliva flow and digestive activity, settles the stomach, relieves vomiting, and eases pain from gas and diarrhea. Ginger is also effective as an anti-nausea remedy.  Researchers have found that ginger is more effective against motion sickness than the most commonly used over the counter medication. Ginger is also used as a pain reliever and it helps lower bad cholesterol.

OREGANO: Oregano is a powerful natural antiseptic. It contains 19 chemical compounds with antibacterial actions as well as four compounds that soothe coughs. Oregano’s healing properties lie in it’s ability to fight microbes such as viruses, fungi, parasites, and certain bacteria. It is also anti-spasmodic (relieves muscle spasms). So, stock oregano during the cold and flu season and use it generously in recipes. Oregano is great when used with other healing spices such as Marjoram (which also fights bacteria, viruses and is antispasmodic), and Thyme a strong antifungal.

PARSLEY: Parsley is high in Vitamin C, Vitamin A, chlorophyll, iron, calcium, sodium, magnesium and more. May use to build blood with the iron, bones and teeth with the calcium. It also helps the adrenal glands, benefits the optic and brain nerves, strengthens digestion, and helps the urinary system. It's a diuretic and relieves water retention.

ROSEMARY: Helps the nervous system and is good for headaches & migraines, chronic fatigue,
poor appetite, low blood pressure and weak circulation. It's also high in antioxidants. You may make an infusion of rosemary by steeping 1 tsp of the dried herb per cup of water for 20 minutes. Or add rosemary to soups and beans.

SAGE: Sage is helps improve appetite and to ease inflammation, particularly of the mouth.
For nursing mothers who may be experiencing over-production, sage can help to slow milk production.

THYME: Thyme contains thymol, which increases blood-flow to the skin. The warmth is comforting, and some herbalists believe that the increased blood-flow speeds healing. An anti-spasmodic. Thyme relaxes respiratory muscles and is endorsed for treating bronchitis by Commission E, the expert panel that judges the safety and effectiveness of herbal medicines for the German government. Aromatherapists say that thyme's scent is a mood lifter.

TURMERIC: The curcumin contained in turmeric provides powerful anti-cancer properties, especially for past smokers. Curcumin has clinically proven anti-inflammatory effects, including significant beneficial effects in relieving rheumatoid arthritis and carpal tunnel syndrome.
Turmeric is also packed with antioxidants, including vitamins A, C, and E, and may help prevent cataracts.

Sparkler Specials & Freedom of Choice!

It's the 4th of July holiday week and we would like to express our gratitude to all of you that have made the choice to shop at our organic store, experience health transformations and participate in learning at our classes and retreats. 
We will always have the FREEDOM of choice when it comes to our body's health...we may not agree with or like any of the the new health "laws" or mandatories (insurance, taxes, vaccines...), BUT we do have the ability to make a change.
